Purpose
Ensure safe service for guests with food allergies by standardizing how we identify, communicate, prepare, and document allergy orders. This is a zero-tolerance policy — any failure to follow these procedures will result in corrective action or termination.

- Zero tolerance for shortcuts — every step in this policy is mandatory, every time
- Take every allergy seriously
- Never assume ingredients and use the allergen resources to ensure a safe guest experience
- Communicate clearly and confirm understanding
- Prevent cross-contact at every step
- Document in the POS and on the ticket
Step-by-Step: At the Table
- Listen and clarify: "What is the specific allergen?" "How sensitive is the guest?"
- Repeat back for accuracy and confirm avoidance needs.
- Inform the MoD immediately for any severe allergy or uncertainty.
- Offer safe options or check with the kitchen before promising anything.
- Remind the guest we will document and flag their order end-to-end.
Step-by-Step: Communication to Kitchen
- Verbally alert Expo or the station lead before sending the order.
- Confirm required precautions: clean pan/tools, change gloves, fresh utensils, separate workspace.
